Raw material used in macaroni manufacture

Pasta are well kept, from them it is possible to prepare quickly for many dishes and garnishes, they have high food value. Their structure includes fibers (10, 4-14, 3 %), carbohydrates (66-71, 5 %), fats (1, 1 %), клетчатка, mineral substances. Power value 100 г is equal 336-349 kcal.

To make pasta of wheat flour, make pastry, from which form products, dry, cool, sort and pack. At preparation of the test use обогатители: egg mélange, a tomato-paste, a tomato-mashed potatoes, dairy products, and also flavoring additives.

Pasta subdivides into groups: A, B, and on the maximum, first and second grades. Group A - the pasta made of a flour of firm wheat (дурум) of the maximum, first and second grade: group - from a flour soft стекловидной wheat of the maximum and first grades; group B - from a wheaten baking flour of the maximum and first grades.

The grade of pasta is a qualitative characteristic of a product and depends on a grade of the basic raw material used for manufacturing (pasta in/with - from a flour of the premium; 1 grades - from a flour of the first grade; II grades - from a flour of the second grade).

 

Assortment of pasta

Depending on the form pasta subdivides into four types:tubular, threadlike, tape and figured. Each of types divides into subtypes and kinds.

Tubular products subdivide into subtypes under the form (macaroni, рожки, feathers) and on kinds - on the size of external diameter. Macaroni are tubes with a direct cut. On length they can be short (no more than 150 mm) and long (not less than 200 mm). Рожки - short, изогнутые or straight lines, tubes with a direct cut. Feathers - a short direct tube with a slanting cut.

All kinds of tubular products differ with diameter of sections: Соломка (except for feathers) - up to 4 mm, Ordinary - 4, 1-7 mm and Amateur - more than 7 mm.

To threadlike, tape products carry vermicelli. Distinguish vermicelli short - length no more than 15 s-m and long - not less than 20 see Vermicelli can have the various form of section: round, square and ellipse. Kinds of vermicelli: web (diameter up to 0,8 mm), Ordinary (0,9-1,5 mm) and Amateur (1,6-3,5 mm).

To tape pasta carry noodles. On width it happens: narrow - up to 7 mm and wide - from 7, 1 up to 25 mm; and on length: long - length not less than 200 mm and short - no more than 150 mm.

Macaroni, vermicelli and noodles let out also in the form of мотков and jacks, the weight and which sizes are not limited.

Figured products are flat or volumetric products of a complex configuration which receive pressing through figured apertures of matrixes or выштамповыванием in the form of asterisks, gears, cockleshells, in the form of grains of rice, the alphabet, бантиков, ringlets, etc. the Size of these products is not normalized, but the maximal thickness should not exceed 1,5 mm for штампованных; 3 mm - for pressed.
